Barhi Dates: The UAE's Golden Variety, From Crispy to Caramel

Most date varieties are eaten at a single stage of ripeness — the tamr (fully dried) stage that defines the date most people know. The Barhi is different. It is one of the very few UAE-grown varieties that is genuinely excellent at two completely different stages: crispy and butterscotch-bright when eaten fresh at khalal, and soft, golden, and deeply caramel when fully ripened to tamr. That versatility, combined with its distinctive golden colour and rich flavour, has made Barhi one of the most sought-after Emirati varieties.

What Does Barhi Look Like?

The Barhi date is round and relatively small — more spherical than the elongated Khalas or the compact Fard. At the khalal stage it is a bright golden-yellow, smooth-skinned, and firm to the touch. As it ripens through the rottab stage to tamr, the skin darkens to amber and the flesh softens progressively. Fully ripe Barhi tamr has a wrinkled, golden-brown skin and a very soft, moist flesh that is noticeably richer and more caramel-forward than Khalas at the same stage.

The Khalal Stage: The Crispy Experience

Eating dates at the khalal stage — before they have begun to dry and soften — is relatively rare outside the UAE and the broader Gulf. Most dates sold commercially are harvested at tamr; khalal fruit is too perishable and short-seasoned to travel. Barhi is the variety that has made khalal eating most popular in the UAE, because its khalal stage is genuinely pleasant rather than merely novel.

Fresh Barhi at khalal is crisp like a firm apple, mildly sweet with a distinct butterscotch note, and faintly astringent at the skin — an astringency that disappears with full ripening. It is typically eaten whole, without pitting, and is a highlight of the UAE summer farmers' markets from July onwards. Many who try it for the first time are surprised: it tastes nothing like the soft, sweet date they expected.

The Tamr Stage: Soft and Caramel

Fully ripened Barhi tamr is a completely different eating experience from its khalal stage. The astringency is gone, the flesh is extremely soft and almost melting, and the flavour is intensely caramel — richer and more buttery than Khalas at the same stage, with a sweetness that builds rather than landing immediately. It is one of the most indulgent of all UAE date varieties when fully ripe.

Barhi tamr is best at room temperature, where the flesh is at its most yielding. Chilled, it becomes slightly firmer and the flavour is more muted. It pairs beautifully with gahwa — the coffee's spiced bitterness contrasts with Barhi's intense caramel in a way that makes both taste better.

Where Barhi Grows in the UAE

Barhi palms are cultivated widely across the UAE — in Abu Dhabi, Ras Al Khaimah, Fujairah, and the Al Ain interior. The variety performs well in the UAE's combination of extreme summer heat and reliable irrigation, which allows it to develop the sugar density that makes both its khalal and tamr stages rewarding. It is harvested from July through September depending on growing region and the stage at which it is picked.
