In the UAE, maamoul is more than a cookie. It is a gesture of welcome, a mark of celebration, and a quiet expression of care.
At The Date Room, we honour this tradition with a recipe that stays true to its roots while embracing a modern sensibility — no refined sugar, no preservatives, entirely plant-based. Our maamoul is sweetened only by the dates themselves, harvested from our own farms in the palm groves of Al-Ain.

Made with Dates, Not Sugar
Most maamoul relies on refined sugar for sweetness. Ours does not. We use the natural richness of Kholas and Fardh dates — the same varieties we grow on our own farms in the UNESCO-protected groves of Al-Ain. The dates are slow-cooked into a dense, fragrant filling that carries the deep caramel warmth of the Emirates.
The result is a maamoul that tastes the way it was always meant to — of the land, of the season, of something real. Every ingredient is chosen with intention: plant-based, free from additives, and made in small batches so nothing is rushed.

Our master bakers shape each maamoul individually, pressing the dough into carved moulds that imprint the delicate patterns you see on every cookie. This is not a factory line — it is a craft practiced with patience. The moulds we use echo designs passed through generations of Emirati baking.
The dough is mixed to a precise texture — tender enough to crumble at the bite, sturdy enough to hold the generous date filling inside. After pressing, each cookie is baked at a controlled temperature until it reaches that perfect balance: golden outside, soft within.

About Our Maamoul
Maamoul is a traditional Middle Eastern shortbread cookie filled with dates, nuts, or a combination of both. The name comes from the Arabic word for ‘filled’ or ‘stuffed’. In the UAE and across the Gulf, maamoul is closely associated with celebrations — it is served during Eid, weddings, and whenever guests are welcomed into the home.
Our maamoul is made exclusively with Emirati dates from our own farms in Al-Ain — we use the natural sweetness of Kholas and Fardh dates instead of refined sugar. The recipe is entirely vegan, free from preservatives, and baked in small batches by our master bakers. Every cookie is pressed by hand using traditional moulds.
Yes. Our maamoul recipe is 100% plant-based. We use no butter, eggs, or dairy — the richness comes from the dates themselves and carefully selected plant-based ingredients. It is also free from added sugar and preservatives.
Store maamoul in an airtight container at room temperature for up to two weeks. For longer storage, refrigerate for up to one month. Maamoul can also be frozen for up to three months — bring to room temperature before serving for the best texture.
